Is there any directories of pay as you go saunas or steam rooms? It's the one thing I'd like from a hotel/gym, but don't want an expensive subscription.

Some better gyms offer them on pay as you go, but it depends where you are in the country

If it is only very occasionally, you may be able to get free trial pass at gyms, typically 1 or 3 days depending on the marketing offers available.
If you are ever staying at a hotel, the access to the health spa is often complimentary while in residence.0
