I bought a couple of packs of date paste. OOD but that doesn't matter bc it will go in the freezer. Has anyone done any baking with this product?

I would imagine it could be used as a sugar substitute in recipes; Christmas cake and Christmas pudding spring to mind. I've also enjoyed a Middle Eastern "halwa" balls, which to me looked like chopped nuts bound by date paste, rolled and chilled..
You have to be careful when melting chopped dates as past a certain point the mixture turns into rock. So don't be tempted to overheat (swimming in liquid, such as sticky toffee pudding sauce is unaffected though). No man is worth crawling on this earth.
