I have already asked a couple of questions today, so feel like I shouldn't be posting again, but I am really motivated to stick to my grocery challenge this month (having looked at the finances today :eek: )
Anyway have looked in my freezer and cupboards and this is the (main) stuff I have in, I have done a bit of a meal plan but I still think I am looking to buy too much and could manage with less so am looking for any good (and easy) recipes to use what I have - I have tomorrow sorted, we are having a picky tea of chicken bits, garlic bread and potato wedges (from the freezer) and I will be buying a chicken to roast for Sunday with veg (with leftovers to use Monday)
I am feeding 2 adults a fussy 5yr old and 21 month twins

bag of large prawns (only me that will eat the prawns, but would love a recipe to use them other than prawn cocktail or prawn sandwich)
4 chicken breasts
fishfingers (5 left so will do the kids 1 meal)

block of cheese

bacon
Cupboard
Rice
pasta
noodles
Curry sauce
stir fry sauce
beans
tomatoes
passata
tin chick peas
spaghetti hoops
wet tamarind!!!! (I have noooo idea)

greek yogurt
couple of peppers (big wrinkly but not too bad)
usual stuff like gravy/stock cubes/herbs/spices/tom puree
luckily I am fine for my cleaning/washing/dishwashing/toiletries and I also have plenty of cereals/pickles etc. so just main meals I am looking for
I am going shopping tomorrow, so will be buying fruit n veg etc. just thought there might be some good ideas based on what I have...

I would start with chicken stir fry (2 breasts can be bulked out as stir fry uses loads of veg), with noodles,
chicken curry with rice,
spag bol or better still lasagne to use up the milk and cheese.0 -
No additional items required
Pea and Bacon risotto
2 tbsp olive oil
small chunk butter
1 onion finely chopped
6 streaky bacon rashers chopped (use any you have)
300g risotto rice (if not can be done with long grain but dont overcook)
1 litre hot veg stock (3 stock cubes)
100g frozen peas
heat oil and butter in large pan tip in onions and fry about 7 mins.
Add bacon fry 5 mins more
Tip in rice and stock and bring to boil.
Stir well the reduce heat and cook with lid on for 15 - 20 mins until rice is almost tender and most stock absorbed.
Stir in pease add salt and pepper cook 3 mins more until peas cooked.

Pasta with bacon in white sauce and topped with a sprinkle of cheese.Use 2 rashers bacon
Mash spud, fish fingers and peas
Chicken curry and rice...Using 2 chicken breasts
Prawn curry and rice
Cheese and potato pie
Spag bol..Using half the mince, peppers, red onion
Shepards pie...Using other half of the mince
Chicken stir fry...Using 2 chicken breasts and noodles

Those hotdog rolls you had, try using them as a pizza, slice them in half. You could have prawn ones, maybe if there is some bacon left that could go on the others, some onion etc. Spaghetti hoops pizzas for the kids even. Passata makes a good base (I tend to heat it and reduce it down a little) then of course using the cheese.One day I might be more organised...........

I'd make a tomato based sauce with some passata, garlic, onion and chilli all cooked down together to reduce and chuck in some prawns, stir through until prawns are warm and then mix in with some cooked spaghetti - chilli prawn pasta mmmmm:j0

Suppose that is where you could split what you do with the prawns, you could cook a chicken breast that is left to do 'chilli chicken pasta' for your partner and then 'chilli prawn pasta' for you while the kids have the fish fingers or cheesey pasta. I'm another who really likes prawns but DP isn't as keen so I tend to make the sauce, curry, italian style or whatever we're having with it like a stirfry etc then split it in half and add cooked chicken for him and prawns for me.One day I might be more organised...........

Some great ideas there, I really didn't think I had much there at all, but I now have some lovely recipes to try that I have never thought of...definitely going to try the risotto (won't be pulling the bacon out of the fridge for breakfast now!!) and the chilli prawn dish next week....
I also have some great ideas for using up my hot dog rolls (and am hoping fussy 5yr old might like them hot - heres hoping!!
