Does anyone have a recipe for a quick and easy pizza dough and sauce?
Got my Nephew coming for the weekend soon and I'd like to give homemade pizza a go.

Pizza dough is just a lean bread dough so ultimately flour, water, yeast and salt.
Ideally you use 00 flour but if you dont want to do that you can use bread or plain flour or a blend - never personally used just plain flour but people do write recipes saying it works.
It's nice to use a bit of semolina on the bottom or to dust the peel as it gives a certain bite. Many will put a small amount of olive oil in the dough and some advocate a bit of sugar or milk to help the yeast get going.
Personally prefer to do a slow second rise in the fridge overnight but can be skipped if you want it as a shorter activity.
Sauce is passata or tinned tomatoes part drained in a blender, basil and/or oregano and crushed garlic. Some add a little sugar if the tomatoes are too tart and seasoning.3 -

My pizza dough recipe:
2.5 cups strong flour (or use plain flour)
1 cup water
1 sachet yeast
Pinch of salt
Combine the above in food processor to form a dough. Kneed well. Place in a bowl, cover with a tea towel and allow to rise for an hour in a warm place. Kneed again and then roll out into a pizza shape. Allow to rise for 20 minutes and then apply topping.
For pizza sauce, passata or a pureed tin of tomatoes is a good place to start and you can just apply those, if you want. If you want something thicker, finally chop an onion and gently fry it with crushed garlic until it is translucent. Add the pureed tomatoes, a pinch of salt and a teaspoon of sugar, together with a splodge of tomato puree. Simmer gently for 20 minutes or so until thick. Allow to cool to luke warm before applying to your pizza dough.

Quick & cheap pizza sauce:
tomato purée - add a little water to make less thick/spreadable.Dried oregano
Make a couple of hours beforehand to allow oregano to infuse.
Haven't said quantities as it depends on the size of the pizza and how much sauce you want. I put more sauce on my husband's pizza as doesn't eat most cheese.2025 Fashion on a ration 0/66 coupons

I have edited the above post. Something bugged me about it all day, yesterday, and then I realised that I’d typed 1.5 cups instead of the correct quantity, which is 2.5 cups of flour.

Pizza is very versatile and toppings can be what you want them to be, although having lived in Italy I prefer the classics and anchovies - a very marmite ingredient - a must.The only thing I'd add to the above is get your oven as hot as you can, and if you have a pizza stone so much the better.Personally I sometimes use a wood fired stove, use Italian flour and a special yeast which I've only just discovered but does make a difference to the handling of the dough. But the great thing about pizza is you don't need them and your pizza will probably be better than the local takeaways. Good luck.1

We had h/made pizza tonight. The sauce I used the recipe above but also added a little basil as well as the oregano.My DH has anchovy, onion, capers and olives as his toppings tonight.I hade: a berry small bit of chopped up left over roast beef, onion, pepper, tomatoes. mozzarella and half a small red chilli just to give it a bit of a kick.I'm very lucky as my oven has a pizza setting and a proofing setting, it has made all the difference.2025 Fashion on a ration 0/66 coupons

Lidl and Aldi do a ready rolled pizza base, it's not anywhere near as good as home made but its cheap. It can also be cut into shapes, if that's something your nephew would like, making shapes to decorate.
English muffins, split in half also make a good base for individual pizzas.
I have also seen part baked rolls, cut into small slices made into little pizza bites, that look good.
For sauce I use a can of chopped tomatoes, oregano, a big squirt of tomato puree and some olive oil, blended together with my hand blender.
