We usually have our "summer holiday" in destinations like the Canaries (around February) or Greece (around May).
We feel as a family that it is far better to get on a plane in 4 degree drizzle after months of gloom, and disembark 4 hours later in 23-25C sunshine than to wait until the one 6-8 week window in the UK where the weather is actually lovely, then jet off to somewhere like Turkey in August where it is 35-40C in the shade.
(I know many people who do this time and time again every year, and then complain that it was far too hot every time!)
Plus as this isn't peak season, everywhere is a little quieter and not so overrun with other holidaymakers.
We will then sometimes also do a 4-5 day city break sometime around September.
Our family also has a static caravan in the scottish borders, so we can always escape there at very short notice for as long or short as we fancy during the summer if the weather is looking particularly nice.• The rich buy assets.

We have a little place in the country in Spain, and mostly have a month there in April-May, and again in October-November. Lots of sunny days, warm enough for a swim in May/October, and great weather for exploring new areas. We will be there this summer too, but living at a relaxed speed, most days with a book by the pool!
However, weather in the UK is never such that you can rely on consistently good weather, which doesn't really fit if you are restricted to 2-3 weeks, and especially with kids..
It is easy to underestimate the costs of a summer holiday in the UK (not just accommodation and eating out, but also the need for "entertainment" to cover for unreliable weather).1
