Cheese baking that is freezable

I have 1.5kgs (half a round) of Applewood Smoked Cheddar that is on date (don't ask :rolleyes: ).

There is no way that it will all get used in sandwiches and the such before it starts going furry (even though my lot do eat cheese like it's going out of fashion), so I'm looking for cheese baking that can be frozen.

I'm thinking cheese scones, straws (lunchbox stuff), and maybe something that can be used for hot dinners - but I don't have any tried and tested recipes.

Any ideas?

    You could grate it and bag it up into sauce size quantities ready to pull out and pop into a white sauce later on to make a cheese sauce

    I'm even lazier than that and just chop it into biggish chunks and freeze that way. It will keep well for a fair while...the only marked difference is that it may give it a crumblier texture than before. I've frozen various cheese types over the years and not had major problems with them.

    Why not freeze in useable sections and pull out of the freezer as and when required.Wrapped properly cheese should freeze successfully for 6 months

    I use frozen grated cheese straight from the freezer to make lunch box sandwiches. It is defrosted by lunch time ;)

    Mortgage-free Glee!
    I tray freeze grated cheese, then bag up so you can just shake some out as a topping or into cheese sauce as you need it. It keeps better this way and is instantly useful. I have also frozen cheese as a block but find it goes too crumbly.
