If in the future I wanted to apply for a new mortgage/remortgage once the 6 years are up and defaults dropped off….even if I still owe balances do I have to declare them on a mortgage application as they would be no longer on my credit report?

If you are still paying them, a mortgage lender will see the payments on your bank statements and know what they are. If you stop paying, the creditor may go for a CCJ.0
