    Unfair? Completely. 
    Unlawful? I doubt it. 

    But this sort of cowboy approach to HR will also come with knowing their risks and making commercial choices so if it was me I’d be chancing my arm at a settlement anyway just because they’re scum bags and might chuck a grand or two at it.

    Sounds of the entire enity was being totally mismanaged previously. HR is simply performing the task that they are employed for and have been instructed to do. There'll be a complete organisational restructure behind the scenes. No doubt made more neccesary by Rachel Reeves crippling budget last October. Hospitality is a sector which is going to be hit extremely hard immediately. There's no avoiding the increase in employment costs.

    Perhaps worth repeating again that the employer has not (yet) acted illegally, and may not do so.

    The OP has been there less than 2 years, so has very limited rights, and nothing indicates that these have been breached. No case for an Employment Tribunal, no way to ensure the employer treats people better in future.

    Expend energy on getting a new job, and working out what payment is due, nothing else.

    Why would they chuck anything at it? OP might have a case for wrongful dismissal if they don't pay holiday/notice pay etc, but not unfair dismissal given how short a time they've been employed. There's nothing for OP to 'chance their arm' over in that respect.
    Googling on your question might have been both quicker and easier, if you're only after simple facts rather than opinions!

    Thanks everyone. I appreciate the support and advice! I’ve sent an email over asking what I’ll be paid and what holiday they owe me so I can check it against my calculations.

    It was unfair, but as you were there less than 2 years then perfectly legal unfortunately. 

    I appreciate it's upsetting, but perhaps try and see it as a blessing in disguise. They got rid of the manager for no reason then had you doing the managers job for a much lower wage, and nor did they build this promised spa... not exactly the sign of a good company.

    Re-write your CV, add your new found work experience that you've gained from doing this job, and start applying elsewhere.

    No, I am not perfect, but yes I do judge people on their use of basic English language. If you didn't know the above, then learn it! (If English is your second language, then you are forgiven!)
