Chicken and ham to use up

I've got a roasted chicken breast and three slices of ham which I need to use up today. Also got a small quantity of pilau rice and peas if I can incorporate that too :rolleyes: . I'm stuck for ideas. I've got quite a well stock cupboard of dry ingredients, mushrooms/onion/a pepper/potatoes/a leek. Plenty of milk/6 eggs/stock.
Main meal for 2, all ideas are welcome, though OH dosn't much like tomato-based sauces.

    Hi noonesperfect,

    I made a turkey and ham egg fried rice for tea last week and it was lovely. Fry the rice until piping hot then add the cooked egg, soy sauce, peas and finally the chopped up chicken and ham. Serve as soon as the meat is thoroughly heated through.

    Or what about mixing the rice, chicken and ham, add some seasoning and stuff the peppers.

    Chicken Supreme? Make a white sauce and add the Chicken, Ham and peas - make absolutely certain that they are fully heated through! Serve with the pilau rice.

    Chicken and Ham Pie? Could use up the mushrooms with that as well. Just make some chicken gravy (granules if no stock), add some sweated (not sweaty) onions, mushrooms and the chicken and ham. Again make sure that the filling is fully heated through. Place in a dish and cover with some pastry.

    Ham and Leek roll-ups in a white (or cheese) sauce? wrap slices of ham around partly cooked leeks. Make up the sauce and put the wrapped leeks into the sauce. Put into a medium-hot oven and cover with breadcrumbs and grated cheese to crisp the top.

    My mouth is watering at the thoughts of anything combined with leeks now - mmmmmmm

    what about making a jambalaya?
    2 oz butter
    2 onions choppes
    2 garlic cloves crushed#5 celery sticks chopped
    1 red pepper chopped
    1 green pepper chopped
    1 tsp cajun spice mix
    8oz long grain rice
    1 tin chopped tomatoes
    1 lb of assorted cooked meats
    8 floz veg stock or white wine
    1 tsp salt

    Melt butter add onions, garlic, celery, peppers and spice. Mix well
    Add rice and stir
    Add tomatoes diced meat stock/wine and salt. Bring to boil stirring well.
    Reduce heat cover and simmer 15 minutes, until rice is cooked & fluffy & absorbed liquid. Seems too dry add a little boiling water towards the end. Yummy!

    I think the pie idea will go down well with OH, he likes his pies. He'll have to make do with shortcrust, I've no puff pastry in and I'm not going to faff about trying to make it! Too much turning and rolling methinks.

    Make a thick white sauce, chop the ham and chicken into it and then roll in breadcrumbs, fry and you have delicious rissoles!!! (think thats what they are called, my mum always did!!!)
