Pickling/Preserving Proportions

Hi

Does anybody know a rough rule of thumb for the proportion of salt, vinegar & water to make home made pickles/preserves?

    also a question, I made some mixed pickles with celery, onion, garlic & herbs.. The garlic seems to have gone turquoise - is this normal?

    I made pickled garlic before and it changed colour. I never ate it. I am sure its okay but I could not see myself trying it.

    Regarding pickling I am sure there are threads covering it already.

    I too pickled garlic before (went through a stage where i dod lots of pickling) and my garlic went a purple colour too.

    I did eat mine and it tasted ok and i am still alive so i am sure yours would be ok too!:j
