If I cook brisket it's in the slow cooker with beer, onions & bay leaves.
However I think the other important thing about brisket is how you carve it so carved across the grain to help stop it being stringy.
The nature of the cut is a very course textured & stringy so if you just pull it apart it will be stringy.

Use it to make a chilli - just slow cook in a pot with lid in the oven with all the spices and liquid, about 140 for at least 4 hours, then it will fall apart with a fork. Add the kidney beans at the end. Much nicer than using mince. Same principle applies for a ragu.
The finished product can also be frozen.1 -
Lady in my local pub made a pot of slow cooked BBQ pulled brisket which was lovely on a bap! I had two, and then some more meat separately.
