Potato Flour.

Trying to find a source of this. Searches also confuse the search with Potato starch which is not the same thing. Potato flour is far more nutritious and good for making bread. Any sources appreciated.

I've not tried it myself, but there's plenty of people online who substitute potato flakes (instant mash), either more finely ground or slightly rehydrated depending on the recipe. The ingredients of instant mash are quite variable though - I'd try one that's almost all potato flakes with a bit of rosemary (sainsbury's) over one with palm oil and the like (tesco) if you try this!
It makes sense to me - they're both cooked, dehydrated and ground potatoes, just the flour is ground more and has no other bits. I've made rice flour (it's just rice, finely ground) over paying insane amazon prices.
