Sounds pretty good , I live on my own and don't think I do as well. Sometimes I make a big batch of veggie soup including lentils ( red don't need to be soaked) or tinned beans and keeps for 4 or so days. For quick meals/ snacks sometimes have scrambled egg on toast, moved away from beans on toast as think baked beans are quite processed. Go for wholemeal pasta and brown rice but some white rice as quicker .

When I was working I did a huge pan of veggie soup and stuff got added during the week. That was tasty and healthy.I'd also use a weekend morning to batch bake with something interesting on the radio, then I'd have good fresh meals ready from the freezer.Stuffed marrow for one I used to make in rings, cutting it across and freeze those, freeze some sauce as well. Its not as good as fresh but my body sighed with relief when I ate that of an evening.I always took Saturday mornings as my time out from healthy and had doughnuts with my coffee after shopping and something tasty for lunch.A chocolate as desert after a healthy meal.I find more incentive to cook and eat better if there is a little naughty treat now and then.
