    @sarah1972. I make enough for my parents to have a jar a week.  That is a lot and I don't have the capacity to shred. Dad has said he prefers it minced too, which is how Mum used to do it when she was able. This isn't competition marmalade.

    Yes it double dare IS Judith Chalmers too! I don't think I've ever seen a young May Berry before...
    PurpleIvy - that is a LOT of marmalade. I made nine jars today and will be making another nine tomorrow [ there was a sugar miscalculation on my part so I've taken the opportunity to add some stem ginger and some rum to the next batch.
    In the end I went with a mish mash of recipes, boiled the fruit, cooled it, cut, separated pulp, pith and pips and sliced up the skin and used almost double sugar instead of single amounts [ as described by the Australian Marmalade competition official video] and it's alright. Not as nice as tangerine marmalade though :)
    I might try mincing next time...
