If the contact from the debt recovery firm has only been via mobile phone, sms and email, to which I have not responded.

Should I start with the GDPR letter, to force further communication to be in writing only or should i send the "Prove-it" letter in email form?

I realise the point is to force them to provide physical evidence but is the email response a non-starter?

You could respond by email but this just means they know they can contact you that way and leaves it as a way to harass you in the future.  Personally I'd be doing everything by snail mail and tell them to only retain your postal address and nothing else.

Debt is something you should always deal with in writing only.

Email is acceptable in some instances, but a letter is deemed to be from the debtor, and is more professional.

Thank you all. I received a letter confirm that the trumped up debt will no longer be pursued.
