    As others have said, make it from scratch, all in one method. Don’t forget the nutmeg!
  • Thanks, and like the part milk part water ideas, especially with stock/mustard/nutmeg etc -probably works best using full fat milk.

    I'm planning to make extra for DS to take back to uni so will cost it out once I've made it and know how many portions I've made

  • Hi Beckstar I use Nido milk powder to make up milk, then follow the usual method of butter, flour to make a roux.

    Never used it, but why not just use proper milk Instead of processed?

  • You could use cornflour and milk with some salt and pepper, for a gluten free white sauce.

    The problem is the aftertaste from the evaporated milk would be pretty hard to mask. It won’t be as strong if it’s evaporated skimmed milk, but you may still taste a difference.  That’s the issue most people have with UHT milk - unless it’s UHT skimmed milk, it will taste different to fresh milk because of the “cooked” cream from the UHT process.

    i'm not a fan of faffing around when I make lasagne so I use Lidl's Bechemel sauce which is available in Italian Week.  It keeps well, so I always have a couple in the store cupboard.  It won't be the cheapest but it tastes fab, and it makes life much easier.
    Better is good enough.
  • Maybe not the cheapest option but a tin of Campbells mushroom condensed soup (or chicken) plus a tins worth of milk does the job well.
  • Too salty.
