Lidl fruit and veg boxes

Popped into Lidl this morning, don't go there very often. Thrilled to find there were four of these boxes and they were happy for me to buy two.
Now I have lots of fruit and veg, so looking for ideas of how to use in the next couple of days.
Bananas, strawberries and grapes will be with yoghurt for breakfast.
Apricots are a bit dry and pears (about 10) are going soft, so I might stew them to make crumbles or sponges (do I do them together? Peel the apricots?)
Potatoes, parsnips, tomatoes and chilli are straightforward.
The there are loads of sprouts and four very dry corn on the cob. Sprouts I could always freeze but that seems dull, no idea if the corn is edible. Any ideas?
Oh, and a potted basil and parsley too!! I will be going to Lidl more often 😊
Edit - also a very ripe aubergine which I have never cooked with before 🤔

No need to peel apricots. You could try slicing them up and soaking them in say a glass of whote wine with a dash of amaretto!
Aubergines need to be cooked- but then can be eaten cold

You could use some of the pears to make a chutney. This is the recipe I use and it's very nice with cold meats etc:
