    Jamie Oliver says chop up a whole load of veggies, absolutely anything that you have. Then add;

    Pork, apples & a can of cider.
    Beef & red wine.
    Chicken & a can of tomatos
    Lamb.

    Also, can take veggies, and meat and add a couple of spoons of curry paste.
    Or, can take veggies, left over chicken and make a good hearty soup.

    I chop up kilos of veg at the same time, carrots, potatos, sweet potato, leeks, onions, swede, and any thing else that's there, and then stick it in bags/boxes in the freezer. Then any day I don't want to think about tea I chop up some meat, fling in a box of chopped veggies, some stock, seasoning and anything extra and leave the lid on for a few hours. And that's a 10 minute tea for me.
  • I make veggie stew for ds. I put soup mix (from sainsburys) it is a bag of various different pulses, any veg that happens to be around. It is quite nice with a sweet potato in too. sometimes I leave it at that and sometimes I put quorn pieces in if I don't have many veg. And I make up a jug of vegetarian gravy and put that in as well.

    The winter staple in our house is Cawl. I use lamb or beef, with leeks, potatoes, swede, carrots and parsnips. It's what we raise Welsh rugby players on...

    hmm be sneaky honeyd - first use sweet potato then if he likes that substite swede (they look and taste similar!) but the swede needs longer cooking.:D

    hi helyg - your cawl is like my cawl! I would say that to call it 'cawl' it must be lamb or mutton and contain leeks!!! any other veg is acceptable - so use whatever i got hanging about. any other meat i call 'stew' - or am i being pedantic? lol - its MY creation I can call it what I like!
    realised I didnt address the parsnip matter - I find parsnip tastes less strong in stew - but I do like them roasted with a little honey and black pepper and I add them to roast veg with garlic and herbs - verry yummy!! but I tend to take the cores out - they can be a bit tough when roasting them! oh and parsnip chips and crisps are just gorgeous.

    Hi Honey :hello:. Most veg can go in a slow cooker with some kind of liquid.
    I start with carrots and onions and then see what I have around the kitchen.

    I would like to try Pumpkin soup as soon as the pumpkins are in the shops.
    2lb pieces of pumpkin
    1 chopped onion 1 litre of veg gravy

    Cook in the slow cooker and then place in the food processor to make a puree.Add salt and pepper to taste. Serve with bread rolls. Very autunm food on a cold night.
    If winter comes, can spring be far behind?
    Spring begins on 21st March.

    Oh Im sure my Husband would love that! Im actually gonna have a go at making him some Pumpkin pie in a few weeks! So can do both lol.
    I dont have a slow cooker, is it worth getting one of these? I just used a pressure cooker pan I was given as its such a big pan so can make extra.

    Honey, I am just starting with a slow cooker as a lot of folk on here invest in one sooner or later. Very MSE as they are cheep on electric.That is why I said I am going to try in the slow cooker but any cooking method is also fine. I have cooked with pumpkins before, roast pumpkin (like roast potatoes) or mashed as a veg is nice too.
    If winter comes, can spring be far behind?

    Being first language Welsh speaking we actually call any soup or stew "Cawl", so for example pumpkin soup is "Cawl Pwmpen", but the dish which everyone thinks of as Cawl usually contains mutton and leeks. Although presumably go back a few generations and it contained whatever you could find... it's just we do tend to be rather surrounded by sheep!

    I love stews and casseroles, its the only thing that makes winter bearable, I love my pressure cooker. I usually drop a good glug of Worcester sauce in mine, I know that's a no-no for vegetarians but believe there is vegetarian alternative, Hendersons Relish comes to mind, but I could be wrong.
