Yes I'm sure it will be fine until then. I presume the weather isn't stinking hot.
I put the excess cordial in plastic softdrink bottles and chucked them in the freezer until I was ready to use them.
Don't worry about the world coming to an end today. It's already tomorrow in Australia.0 -

Great recipe. I adore the bought bottled version with lemonade - it's a great adult non-alcoholic drink to offer drivers. I'm going out elderflower hunting tomorrow - ours are well on here in the sunny south west - I can even see a bush right now but I'd have to negotiate the nettle patch, the barbed wire fence, a field, the stream, the wooden fence, the bramble patch, the big horse fence and the next field with the steep hill to get there. Some money saving is just to much trouble :-).0

I have just made my frst batch, and got two more on the go now.. ederflowers are just going past their best here, but there are still a few nice fresh ones, so I gt a carrier bag full today - the cordial I made yesterday is divine - lovely with sparkling water!0

After my success with elderflower cordial I now want to try blackcurrent cordial - does anybody know of a receipe as easy and delicious as the one posted on here.The birds of sadness may fly overhead but don't let them nest in your hair0

I want to try blackcurrant cordial too as I have lots of fruit this year. I found these recipes here and here My currants aren't quite ready yet so I haven't made them but I'm going to give it a go when they are.

Thanks Pink - they are the one's that I found when I did an internet search. There is another one whereby you leave the currents and water to stand (like with the elderflower) for a couple of day and only heat gently - I'll try to find it. The idea is that that Vit C remains as it is not heated too much.
I wondered if you need to add citric acid or white vinegar (is that the same as white wine vinegar or the distrilled one we use for cleaning?) - what is the purpose of these in cordial?
Champagne looks like a disaster as Mould is forming. I thought I'd sterillized the bottles enough - it is the bits of lemon left in that are affected maybe I should have sieved it through a mussie?The birds of sadness may fly overhead but don't let them nest in your hair0 -
Aha - re: making the elderflower syrup last longer (I never have much room in the freezer) it appears that adding a 'campden tablet' per gallon (sulphites used to kill yeasts and tope fermenting in beer, wine and ciders) makes it keep much better - I guess this would be the same for other cordials too?

I made up some diluted elderflower cordial (as you would for drinking) and poured it in to lolly moulds and froze it - the lollies are absolutely deliciousThe birds of sadness may fly overhead but don't let them nest in your hair0

Ooops, I didn't sterilise my bottles and the champagne was made weeks ago now. There isn't any mould forming but there's a white residue building in the bottom of the bottles.
