I've just made my first ever batch of Elderflower Cordial. It tastes really nice, but now i'm freaking out because i've just read that the stalks are poisonous? Some of my Elderflower heads had a little bit of stalk left on them before i brewed them?! It did not say to remove them in the recipe!
Am i going to be ok?!

Hi everyone ...its been aaaaages since ive been on here but am now back and hope its ok to rejoin with a couple of questions
Trawling through the posts this evening i noticed a post on elderflowers that rang true!!!
went foraging with my boys yesterday and got some elderflowers. when i came down stairs this am i thought "ew smells like cat pee".....but when i put my nose right in the bag i can smell elderflower>>have i got the wrong ones?????
Also any good recipies for the cordial?..thats if ive got the right ones!!!..the champagne sounds great but im off booze atm.....

i think they do pong a bit also its best to pick/collect them early mornng0

We try to pick them when it's sunny. When the sun is shining on them, we seem to get a better drink (champagne) so we go out in the afternoon/early evening on a hot day. We've used them when they've been picked on a dull day, that's when they tend to smell like cat pee
Still a perfectly good drink though.
Can't help with the cordial. I made some a couple of years ago, I really didn't like it.Bulletproof0 -

you willneed 20 flower heads, 2 lemons, 1 kilo of sugar and 1 litre of boiling water.Put the flowers and the lemon zest (the very outside of the rind, the yellowbit) into a large bowl or jug. Boil the water and pour this over the flowersand zest. Leave it for 24 hours, best to cover it to keep out any flies. Strainthe liquid through cloth and put it in a saucepan. Bring to the boil, add thesugar and simmer it, stirring until the sugar is dissolved. Simmer for 5minutes and you have elderflower cordial! Bottle it in sterile bottles (putthem through the dishwasher or use Boiled(but not boiling) water and give thema good rinse. Use within a month or it might ferment.
They also said there that elderflowers do smell like cat's pee.:pI wanna be in the room where it happens0 -
