How long can shortbread pastry be left before cooking?

I made a batch of shortbread pastry before christmas :rolleyes: and put it in a sealed tin. I've just remebered about it and was wondering if it'd be ok still to cook?

If you are really worried about it's edibility, then roll out a 2p piece size and either grill or fry it, and taste that.0
