National insurance cuts

I went back to an old job and told them what I need to come home with, no problem there, question is does the employer have to pass on the national insurance savings or can she use the savings to pay less towards salary whilst still giving me my original salary?

An employer cant pick and choose what NI deduction to take from you, this is mandated by central government.
If an employer wants to cut or raise your salary this is a separate issue governed by your employment contract.1 -
Usually, people negotiate a salary (gross wage) rather than take-home pay.
It appears that you've inadvertently given your employer a few quid each month, as they can now pay you a lower salary to reach your agreed take home pay.
As long as they're making correct deductions and paying you minimum wage, they're probably not obliged to do anything else.
The issue seems to be what you've agreed with them, what does your employment contract say?0 -
