Self-Employment & Mortgage Renewals

Hi All,
I'm after some advice regarding Mortgage renewals and becoming self-employed:
I'm considering returning to a self-employed status job after a 2 and a half year in PAYE emplyment. However, my mortgage is due for renewal in September.
I'm aware that I will be limited for applying for a new product with another provider, but can anyone tell me is there anything which would stop me getting a product transfer with my current provider, and what are the parameters around this? How do they decide what interest rates to charge etc.
