    Thank you @Wraithlady. Every day's a school day. I had my first Spanish omelette from some neighbours when staying in Spain but, like most of my meals, I'm always looking for ways of getting in extra veg.

    Most countries have their variations on a theme like lasagne, moussaka and shepherds pie? 🤔

    Agreed, my mum used to make us a "beat up egg on bread" others would call it French omelette.

    Speaking of eggs, I do think carbonara is such a simple but tasty dish. I make mine with vege bacon. 
    It's only recently I have discovered just how good a packet of grated parmigiano reggiano is. I use it in lots of dishes and a little goes a long way.  Great on potato wedges with paprika as well as pasta sauces, stirred into soup, sprinkled on mushrooms and even in an omelette.


  • I'd recommend recipes by Miguel Barclay. He is all about cheap, cheerful and use up waste, or substitutions rather than millions of ingredients. He has a series of books but a lot of recipes are already on his youtube, instagram channel as well as on the BBC food channel. https://www.bbc.co.uk/food/chefs/miguel_barclay

    I find if I put fresh chillies on a clean towel on a sunny windowsill (even in winter) they'll air dry in a week or so - once completely dry you can crush or put whole in a jar in the cupboard :)
