My 1.84% fix is ending May. I have locked in with my current provider (Barclays) and managed to secure 3.89% for 5 years with Santander.
Is there any harm me applying for mortgage offers with as many banks as possible so that nearer the time, I can switch to the best rate possible?

Just monitor the market via a spreadsheet, if the rates drop come March/April, then making one switch won't hurt but certainly don't apply to "as many banks as possible".
3.89% is decent.1
