    I am fully self employed, work for myself and pay my own contributions. 
    Except self-employment vs employment isn't really a choice. The fact you have worked for this person for years could indicate employment.

    As you believe you are self employed you are free to set whatever billing structure you like up and apply it. This could be a flat hourly rate for the time you are available, a two tier rate for the time you are waiting and the time you are doing or a fixed fee per call/email etc. 

    The fact you state you have other clients then billing all of them full rate for you to be "available" feels disingenuous as clearly you cannot take a call for all three at the same time but you wouldn't be the first that does. You just need to be clear that payment doesn't guarantee your exclusivity in the terms.
