GIVEAWAY & High-protein Mega Chilli with @lecreusetuk | ad

This is the ULTIMATE high protein chilli, made in my wonderful @lecreusetuk Nectar round casserole. It’s veg loaded, flavour packed, & perfect for batch cooking.

I get many questions about the pans I use, so I wanted to give something back to you guys. I’ve had my Le Creuset white shallow casserole for over 10 years, and now you could win one in a colour of your choice!

Terms and conditions:
Entrants must be 18+ and UK based. Winner will be selected at random on Thursday 30th November 2023 at 17:00 and will be contacted via DM by @sophsplantkitchen official verified account. Winner must be following both @sophsplantkitchen and @lecreusetuk. One winner will receive one Le Creuset 30cm Shallow Casserole in the colour of their choice. The winner’s data will be shared with Le Creuset UK (for sending the prize). Le Creuset reserves the right to amend or void the promotion if necessary to do so.

PROTEIN BREAKDOWN
Firm tofu 300g: 42g
Cooked lentils 380g: 25.6g
Black beans 240g: 12.7g
Kidney beans 240g: 18.2g
Cashew nuts 60g: 10g
nooch 15g: 7.65g
Quinoa or sourdough (roughly 5g protein per portion): 20g

= 136.1
/ 4 = 34.1g

INGREDIENTS
1 medium butternut squash, unpeeled, seeds removed and cut into cubes
4 tbsp olive oil
1 medium red onion, diced
3 sticks celery, finely chopped
1 red pepper, roughly chopped
1 yellow pepper, roughly chopped
5 cloves garlic, minced
2 tbsp coriander stalks, finely chopped
1 fresh red chilli, finely chopped
Spices: 2.5 tsp cumin, 2 tsp coriander, 1.5 tbsp smoked paprika, 1/4 tsp cayenne pepper (optional) 1/2 tsp salt
1 tin cooked black beans + their juices
1 tin cooked kidney beans + their juices
2 tins plum tomatoes
2 tins cooked brown lentils
40ml coffee
1-2 squares of dark chocolate
Squeeze of lime

To serve:
Pink pickled onions
Tofu feta
Coriander
Avocado
Cashew queso
Toasted sourdough / quinoa
