This is the ULTIMATE high protein chilli, made in my wonderful @lecreusetuk Nectar round casserole. It’s veg loaded, flavour packed, & perfect for batch cooking.
I get many questions about the pans I use, so I wanted to give something back to you guys. I’ve had my Le Creuset white shallow casserole for over 10 years, and now you could win one in a colour of your choice!

PROTEIN BREAKDOWN
Firm tofu 300g: 42g
Cooked lentils 380g: 25.6g
Black beans 240g: 12.7g
Kidney beans 240g: 18.2g
Cashew nuts 60g: 10g
nooch 15g: 7.65g
Quinoa or sourdough (roughly 5g protein per portion): 20g
= 136.1
/ 4 = 34.1g
INGREDIENTS
1 medium butternut squash, unpeeled, seeds removed and cut into cubes
4 tbsp olive oil
1 medium red onion, diced
3 sticks celery, finely chopped
1 red pepper, roughly chopped
1 yellow pepper, roughly chopped
5 cloves garlic, minced
2 tbsp coriander stalks, finely chopped
1 fresh red chilli, finely chopped
Spices: 2.5 tsp cumin, 2 tsp coriander, 1.5 tbsp smoked paprika, 1/4 tsp cayenne pepper (optional) 1/2 tsp salt
1 tin cooked black beans + their juices
1 tin cooked kidney beans + their juices
2 tins plum tomatoes
2 tins cooked brown lentils
40ml coffee
1-2 squares of dark chocolate
Squeeze of lime
To serve:
Pink pickled onions
Tofu feta
Coriander
Avocado
Cashew queso
Toasted sourdough / quinoa
