I have been eyeing this pierogi recipe by Olia Hercules and think that you could make the filling part of the recipe and then enclose it in any sort of pastry that you like e.g. ready made puff or shortcrust or even some spring roll wrappers and get quite a good result.

Never had pierogi and I'm not sure I can because I need gluten free and they might well fall apart if I tried boiling them.

OTOH, thanks for the suggestion of making the filling and using another type of pastry!

Drain the pickled cabbage, put in a pot with a couple of spoonful of chutney, the one begining with a B is my favourite, gently heat and stir this will give the cabbage a nice glaze. Served with bangers and mash makes a nice warming winters meal.
  • Mix it with an egg and some flour and seasoning and fry in small splodges as mentioned above, fritters.  You could wash it and dry it, fry it with some garlic and onion as a side dish or roast it with some other veg or make a thick chunky veg soup with some rice and chilli, might make a sweet and sour type affair. Otherwise you could always donate to a food bank. Might be nice for sometime and a change from beans and pasta. Just my thoughts, best of luck.
