pies (aka the large things with a pastry top and bottom - I can never remember which is which), jam, chutney, cake (dorset apple cake but use peaches instead), cobbler. Eat with ice cream!!
use some to cook with chicken or lamb or rabbit (brown with some onion and garlic and leave to slow cook, then add some spinach and peaches) This recipe calls for apricots which are not dissimilar...Lamb Tagine Recipe - Great British Chefs
surely there's loads of curry recipes that call for mango and you could sub peaches.
This is my Dorset apple cake recipe. You could also try Delia Smith's apple and almond pudding if you like gluten free.Dorset Apple Cake
8 oz self raising flour (1 ¾ c flour + 3 tsp b powder)
4 oz golden granulated sugar ( ½ c)
4 oz chopped butter or margarine ( ½ c)Stir the flour and sugar together and then add the butter. Don't blend the butter in too much - it can be left in lumps.
3 - 4 cooking apples (so the recipe says - I use 2 very large bramleys)
Peeled, cored, chopped up a bit. Add to flour mix.
1 egg beaten - add to mix.
Add enough milk to have a stiff batter.
It's incredibly lumpy and you'll think it looks so very wrong. Lump it into a greased tin. (with great difficulty!!) I use a 14" x 4" loaf tin.
Gas mark 4, 180C or 160C for fan assisted ovens.
50 - 60 minutes depending on your oven.
Recipe doesn't say it but it's nice with some cinnamon and/or nutmeg in it and I tend to sprinkle the chunky granulated sugar on the top when it's fresh out of the oven.
Serve hot with cream, custard or ice cream or wait til it’s cold and slice and eat!!
Now I've done it different ways - apples in to the dry flour mix which makes it hard to add the egg and milk.? Egg & milk into the flour mix and then add the apples which maybe doesn't coat them as well? If you have your apples in big chunks and are using a food processor or mixer they'll obviously get chopped up more - which might be why the original recipe states to cut the apples in thick slices which of course would break up more in a mixer. I just use a fork so maybe that's why I struggle just a bit.

Id go for a simple crumble. Although you could also juice/blend them, would probably be nice with some booze at christmas!3

I am very lucky that my friend is a farmer and she owns a peach orchard. They recently had their harvest a few week ago and I was gifted a big crate of peaches from her. I shared a few with my friends but I had a lot left over. My Mum pulled something together but was simple but decadent: crushed tinned peaches mixed with condensed milk (just a dash) and double cream (plenty!). She said it would work with any fruit. Tinned peaches were good but I think it would work even better with pulped frozen peaches.
Eta: I am a big fan of dried peaches, but once frozen they are beyond that point!

I've seen on the internet that they grate frozen peaches and top them with a fresh, creamy cheese like buratta or ricotta. And a little balsamic vinegar on top. It might sound complicated, but I recommend it for people like me who like a sweet and salty mix.
