When applying for work what evidence do I need to show that I have legal right to work in the UK?

They should tell you what to send when you get offered a job (Passport ect).

Passport showing you are a British citizen is sufficient for right to work, you may need to provide other evidences for AML and other vetting.
If you need to show it in person, send a photo, send a video of you holding it and today's newspaper or something else does vary a lot between companies.0 -
I have never had to show them more than a passport. Can always take another form of ID such as drivers license and a proof of address to be safe. NI always good to have also.0

At one public sector job interview, husband had to take passport, birth certificate, marriage certificate, council tax bill and a utility bill plus photo driving licence.0

Ultimately it is up to the potential employer.
Legally they must confirm that the person has the right to work in the UK and are liable to penalties if they get this wrong. There are guidelines as to how they might do this but if they want to go above and beyond to be doubly sure that is up to them.
You cannot force the potential employer just to accept the minimum.0
