My girlfriend and I have decided after 10 years its tim to combine finances.
As Im the main bill payer with all direct debits from my account we've decided just to add her as an account holder to my account.
Will she be able to see all my past statements/transcations from before she was joint account holder or just from then onwards?

Why don't you keep your existing accounts, and open a new joint account into which you both put money in, and pay the bills from that? Or, if you don't want to move the direct debits, convert your existing account to a joint account, and open a new sole account for yourself.
I see that financial transparency and single pot arrangements are lovely, but personally, (happily married) I prefer a degree of privacy on how I spend my money, and my husband feels the same.

If you don't want that then open another account and make that joint.

For 20 years we have kept our finances separate.
We have a bills account in her name and both put cash in on the first of the month.
It app is on her iPad so we can both access it via biometrics.
As my friend found out when his marriage went up the creek with out a paddle, getting untangled and his credit rating
back was hard work.
10 years later he gets bailiffs trying to collect on her debts from when they were married.
