I've received a letter from the courts from Cabot the particulars of the claim state the credit card was started 11/08/2015.
It says a default notice was served without a date, checking my credit score via clear score the debt has been added but the history shows no data since the start of 2017.
Would this debt be "status barred" and unenforceable via a CCJ?

You've had a court claim. The service date is 5 days after the issue date.
You must make a response within 14 days from the service date.
The response can be to acknowledge service, which extends the deadline to 28 days from service.
If you are going to assert that this is statute barred under section 5 of the Limitation Act 1980, then there must have been a period of 6 years since the default date when you did not acknowledge the debt by payment or in writing
