    Satay Sauce (serves 4)

    1 small onion, grated or chopped fine
    1 clove garlic, crushed (or garlic paste)
    1/2 - 1 teaspoon chillies, chopped fine
    6 - 7 tablespoons smooth peanut butter
    1 1/2 tablespoons light soy sauce
    1 tablespoon lemon juice
    1 tablespoon sugar
    2 teaspoons sweet chilli sauce
    1 teaspoon minced or grated ginger
    6 - 7 tablespoons water

    Cook onion and garlic until soft but not browned.
    Add chilli and cook for 1 min over a medium heat.
    Add peanut butter and stir well.
    Add soy sauce, lemon juice, sugar, chilli sauce, ginger and water.  Mix well.
    Bring to boil while stirring, reduce heat and simmer gently for 1 min.

    The Tandoori Marinade Mix is whatever quantities you want (eg 1 tablespoon) of red chilli powder, Garam masala and paprika powder mixed together and added to plain yogurt to make a marinade.  I also add in some garlic paste, ground ginger and tomato puree to taste.

    The Marie rose sauce is equal quantities of mayonnaise and ketchup mixed together for the simple version.  You could add a dash each of lemon juice and Worcester sauce, a sprinkle of black pepper and just a drop or two of Tabasco sauce if you wanted to be a bit more adventurous.

    A simple salad dressing is just a good quality oil (eg olive oil) and white wine vinegar or lemon juice mixed together in a ratio of 3 parts oil to 1 part vinegar.  Place in a jar, put on lid and shake vigorously till mixed.  Experiment with the addition of other ingredients eg Dijon mustard, honey, soy sauce, lime juice, chilli flakes.

  • I've just figured out homemade mayo, since Hellmons no longer tastes the same, so now I can add any extras then.

    I used to do this, I love it in tuna mayo with chopped celery.

    However I can't have mayo anymore, it upsets my stomach. After years of trying alternative brands, and similar products all either not as good or upsetting for my stomach. I then tried natural yogurt with a dollop of mustard and I can now have tuna, celery and mayo again, and use it in salads.

    I have always loved Colmans on one side of my burger and ketchup on the other, never dreamed of mixing them though, will try it
