Help... my cooker has died... soup to make

Help.... My cooker has died!! Good timing huh?? :eek: So no hob or oven at the mo!

I have to make the soup course for our family Xmas meal. Can soup be cooked in the microwave? :confused: If so how and does anyone know a recipie suitable for a vegetarian family of 4 (who hate mushrooms) that can be done in the microwave?? If thats not possible I could possibly squeeze my budget a bit and buy a very cheap slow cooker if that'd help.

I should probably explain that I'm recovering from an eating disorder and find it difficult to be in kitchens. I've only just got comfortable enough to try cooking something in my kitchen so borrowing somone elses' kitchen is not an option, sorry! :o I would love to try to cook something if its possible rather than buy readymade.

Any suggestions would be welcomed!!

  • Carrot & Celery soup

    25g marge
    1 large onion peeled and finely chopped
    675g carrots peeled and sliced
    4 sticks celery chopped
    1 litre hot vegetable stock
    1 small orange rind and juice of
    salt and pepper
    30ml chopped parsley

    3 litre bowl

    Place the butter and onion in bowl. Cover and cook on high for 3 minutes or until softened.
    Stir in the carrots and celery. Cover and cook on high for 8-10 minutes or until vegetables are softened. Stir halfway during cooking.
    Pour inn the stock. Cover and cook on high for 5 minutes then LOW power for 15 minutes or until the vegetables are tender.
    Drain the vegetables and coarsely puree with a little of the stock, then return to the bowl with the remaining stock.
    Add the orange rind and juice, season to taste. Cover and cook on high power for 3-4 minutes or untill piping hot. Serve garnished with chopped parsley.

    This is based on 1000w microwave.

    I have never made soup in a microwave so don't know if that would work!:confused:

    i always make my soup in my slow cooker, you just bung everything in. :D

    Red lentils and vegetables work well in the microwave as the lentils will dissolve and thicken the soup. Use the biggest (tallest) bowl/dish you have.
    Chop a mixture of onions, celery, carrots, leeks, turnips very finely and add to the bowl with the lentils which you don't necessary have to presoak, together with water and a chicken stock cube. I normally simmer for 20 minutes on the hob. A microwave will probably take about 10 mins, depending on the wattage.
  • A friend of mine has an Aga and they switch it off every summer, and all their food is either cold or microwaved-micro-soup has been extremely popular in the freezing summer we have just had!
