Potato question

Hi

Hopefully someone can solve an arguement for me! I have some potatoes that have started to sprout, as far as I knew it was perfectly safe to eat them mashed but my friend insists that you shouldn't eat them, which is right? Personally I think he's just trying to get out of peeling them!

    I've eaten potatoes which have started to sprout before now and I'm still here! It depends how big the sprouts are. If they are getting a bit long then the potato gets a bit too soft so I wouldn't bother then, though they will probably be ok mashed. The only potatoes I know you should avoid are those which are green, and even then the odd tiny bit isn't harmful. I believe you need to eat quite a few green ones before you get ill.

    There's absolutely nothing wrong with eating potatoes that have just started to sprout - just don't eat the sprouts themselves.

    Justamum is right about green potatoes - green bits are an indication of a build up of solanine which is toxic to humans. You can just cut the green bits out - the rest of the potato will be fine.

  • It is green potatoes you shouldn't eat and even they are OK if you cut the green part off. Sprouting potatoes are indeed fine to eat ;)

    I'd taken the sprouts off some potatoes I'd had lying about for a while, before I got the chance to take them out of the sink, my OH spotted them & totally freaked out because he thought we had an infestation of octopu$$y/insecty things!!! :rotfl::rotfl::rotfl:

    If potatoes have just started to sprout they're ok. If they feel rubbery, bin them.

    Waste not want not.
    Cut the sprouts off, cut the green bits off. Eat the rest.
