There are only 2 available on their website but there are 3 listed on Amazon when you search under her name, the ones listed by @Rahven .

But all 3 mentioned by Rahven are available on Amazon.

Only the first 2 mentioned use the Honeybuns name and show on the site but the third, Gluten Free Sweet Treats, was also written by her and the question asks how many has she written. Why should the third one be ignored?

"Gluten-Free Sweet Treats" and "Honeybuns Gluten-free Baking" are actually the same book!

The first was published by Sterling Pub Co Inc, and the second by Pavilion Books. Both books are 176 pages in paperback, and the first review on Amazon of the first book gives the reason why:

A word of warning - this title, despite the different name and cover, is the paperback version of  Honeybuns Gluten-free Baking  (ISBN-10: 1862059470 ISBN-13: 978-1862059474)

I have the other version, and it is page-for-page identical. I tweeted @HoneyBunsBakery to ask why this book has a different title/cover/ISBN but is the same book. They replied to say the book title was changed for this release for the American market who aren't familiar with the HoneyBuns brand

The fact that the first publisher is a " Co Inc" gives the clue that it is American. I have seen this many, many times with books. So Emma has written 2 books, even though 3 have been published!
