    The best bread and butter pudding is the one I make after Xmas with the left over whiskey butter (and before anyone picks up on the spelling, it’s correct because I drink Irish rather than scotch).

    Turkish Macroons are quick and easy - also low in calories :)

    4oz ground almonds
    1½ or 2 egg whites (depending on size)
    5oz caster sugar

    Beat egg whites until foamy
    To the ground almonds in a bowl add a little egg white, mix well, add half the sugar, mix well, a little more egg white, rest of sugar then use the egg white to bring the mix to a soft but handleable state.
    Make into balls and put 2" apart on a lined baking tray with half a whole almond on each.
    10 - 15mins at 200C until just lightly beige
    Should be light and crunchy. Softer in the middle
    Do not overbake to brown.............unless you have very good teeth.

    For a health prob I have I've always used Vitalite veg based marge for baking and have had no problems.
    I'd like to add that other veg based marg is available but I've not found one.
