My flat completion date was 17/05

My solicitor assistant emailed me on 19/05 asking for my NINo for the application to be submitted to the Land Registry.

Why are you asking? There's very little legal significance to how long it takes for the Land Registry application to be processed. You became the owner on the completion date.

apart from the mortgage letter - is there another document that could show I'm the owner of the property?

Presumably you have correspondence from your solicitor? Why do you need to show you're the owner?

Can laypeople remove (old, redundant) Charges from a Title? How?

I got to the end of my mortgage and paid it off.  At the end, the (ex) mortgage company (Halifax) sent me the old(*) title deeds that mentions them as a Charge; also the old Charge Certificate.

I'm guessing that the mortgage company wouldn't have advised the Land Registry of the change in Charge, so do I have to do it?  If so, can I do it without paying a solicitor to do it? How does one go about doing it? I am not a LR "Business e-services customer", just a regular Joe.

What is the downside if I don't do it?

    thanks

*p.s.  it is a flat. We (Lessees) subsequently bought the Freehold of the building. The supplied Title Deeds & Charge certificate date from when we bought the Freehold, rather then from when I bought the flat.  Dunno if that is significant.

Don't guess, check the current details on the Land Registry, it usually costs around £3, if you are asked for more you are probably not on the real Land Registry site...

I think you've guessed wrong, they would have to inform LR that charge has been satisfied. The whole point of charges is that they show who has an interest in the property so can't just be removed by the home owner but has to come from the person who holds the charge.
Remember the saying: if it looks too good to be true it almost certainly is.
