to tell if dough is right 'give' and consistency before final rising, it should feel like your ear lobe.
okay, so that's the OS tip, but how the blue blazes do I know that?
it seems that I've always known that - don't remember reading it anywhere, don't remember anyone telling me, don't remember getting it at Grandma's knee...
curious, huh? anyone else know this bit of folklore? or any other 'how the hell do I know that?' tips?

okay, why do I put a spent match in the pan when boiling eggs??? I have no idea why I do this, just "always" have. I must have learnt this somewhere!!0

Am suddenly having horrendous flashbacks to a row I had all the time with an ex BF-he thought any food that needed to be boiled was only done 'properly' if the water it was done in water which was heated from cold on the hob. I was accused of being 'slapdash' for being so foolish as to boil water in the kettle first, to speed things up a bit...different strokes for different folks, obviously, think maybe once you just have 'the right way' of doing something, there's no changing it! Mind, he never seemed keen to do the cooking himself, happy just to criticise mine :rotfl:0
