left overs in other meals??

Hello Everyone!
Following my days off work & recent adiction to getting up @ 6 & spending hours on this site ive just been to Lidl & Aldi!! I have been there before but just for bits this was my 1st stop rather than hitting ASDA.
Ive bought pates,biscuits etc all better & cheaper than usual..im converted..
My question is..Ive bought the meat for xmas dinner, a 3 bird roast (turkey,chicken & duck) with stuffing £9.99 from Aldi. Its 1.5kg (couldnt get any smaller & it is xmas) but there is only 2 of us...
what can i do with the left overs?
Ive read on here i can freeze the cooked meat..In slices? Ive always thought left overs as sandwiches! Ive read people use it for curries,stirfrys etc...how do i do this? cook the sauces than add the meat last minute?
Ive only just got (well getting) into the art of the slowcooker..but i wanna do this..i dont wanna waste anything!!

Hiya,
I would just slice it and bag it up (or put in tupperware), label with what it is and date and pop into the freezer. You can also use the smaller leftover pieces and bag these up the same way. They will need only a few hours defrosting.
To use, defrost (you can use the microwave) and as you have said, add to the sauces for curries or straight into the wok after cooking the larger vegetables. Ensure it is heated through before serving.Thanks to MSE, I am mortgage free!

I use cooked (defrosted) leftover chicken and turkey in curries etc. Just follow the recipe exactly as normal but add the cooked chicken - and where is says to brown it, just give it a minute, then carry on with the recipe
It's also nice to add to pasta bake - just cook pasta, drain. Add cooked (defrosted) chicken, some frozen veg, fried onion. Pour over cream of mushroom or cream of chicken soup. Stir through. Add cheese to the top and bakeworking on clearing the clutterDo I want the stuff or the space?0 -
You can buy boil in the bag plastic bags. Put slices of meat and gravy in and freeze them. I did this once and it worked a treat. I thought it tasted better than heating meat and gravy in the oven or microwave.0

From my meat-eating past...
This is a lush dish that uses store cupboard ingredients and left-over xmas or sunday dinner.
Pick the meat from the chicken or turkey carcass and place in the base of baking dish (as for shepherds pie). It is even better if you mince it in the food processor, but not necessary.
Any left over veg eg carrots, peas can go on top of the meat.
Add any left over gravy, or make up half a cupful and add this.
Add one tub of single or double cream and stir into the meat/veg/gravy mixture. Season with salt and pepper.
Top with boiled potatoes. Don't mash them as in shepherds pie, but take a fork and spear each potato and twist a bit, so it just roughs the potato up but doesn't totally mash it.
Get a few nobs of butter and smear over top of the potatoes. Season with salt and pepper and bake for 30 minutes until the potatoes go all lovely and golden brown and the sauce starts bubbling up around the sides.

This months sainsburys magazine had a section devoted to dishes that will help to use up leftovers..cant think of any of the top of my head but i remember thinking what a good idea about several of the recipes0

Any leftover meat is also very nice in a lentil salad. Mix boiled lentils with oil, vinegar, garlic, Dijon mustard, salt & pepper while still warm. Once cooled off, add the leftover meat cut fairly small. Eat chilled. we aslo freeze ours in bags and bring them out and have Christmas dinner all over again in the summer.THE SHABBY SHABBY FOUNDER0
