Hi,

What checks are carried out as part of the application process for a Mortgage?

I understand a credit check, check your employment etc.

Are all bank accounts and credit cards checked at a transaction level?

How long is a piece of string? Very hard to answer your question. Other than once (this was with a super specialist bad credit lender in the past), I've never had a bank ask for credit card statements but yes to bank statements.

They can see all your bank statements on the credit report and start with asking for the main one but may ask for more depending on what they see (or don't see) in the main one.
