I'm making elderflower cordial

So jealous cos despite living in the country, elderflowers are nearly as rare as hens teeth

Ive found 3 trees, one is right beside a very busy road, another in someones garden and the third, the only one Id be able to pick, I need to put on the thick trousers and wellies as its in a thicket of nettles , brambles and Hawthorne  - not going in is flips flops and shorts !!!

So I bought some

I prefer to wait for the ripe elderberries, to make jars of hedgerow jelly, with crab apples, rosehips, and blackberries. It is good for colds. 
Our herbalist friend makes elderberry cough mixture.

round here there will be enough for both flowers or berries.

I made great elderberry port some years ago.

Any chance of getting a recipe for that?
All the recipes I have found seem to suggest you have to keep the mixture in the fridge & it has a short shelf life.
