Does anyone know how average over holiday pay for part timers is calculated?

Im currently contracted to 18h but work about 30-39h a week? Holiday pay is based on the average overtime worked. My rate of pay is £10.42 but when I take some holiday I get my usual overtime hours included and my rate of pay increases to about £15.50p/h (variable slightly). I don’t understand how the rate of pay increases to about £15.50 if anyone can explain please?

The rate for holiday is higher than the rate for your standard hours because the holiday rate is based on your average hourly rate. (That is the amount earned for contracted hours plus the amount earned in overtime and divided by the hours in the reference period.)
That is on the basis that your overtime rate is higher than the £15.50-ish you mention as being paid for holidays. So it varies a little because the amount of overtime will vary.0
