Scott Paton, Head Chef at Àclèaf, the four rosette-awarded restaurant at Boringdon Hall in Plympton, has launched his first cookbook of the same name. This book, which is a celebration of seasonality and quality produce, has taken years of planning and tells the story behind Àclèaf, how the menu has evolved and how partnerships have formed, alongside some special recipes.

Scott says: “I’m delighted to launch our first book which will give our guests a little insight into the journey of Àclèaf. From those day-to-day kitchen tasks and sourcing the best ingredients, to developing dishes for our guests to experience.”

The importance of teamwork – which Scott believes is fundamental to creating a happy and inclusive working environment at Àclèaf – is apparent throughout the book, with the inclusion of personal dishes from the rest of the kitchen team, alongside some favourite suppliers. “Being collaborative enables individuals’ creativity and ambition to thrive – and developing new dishes, regardless of position, is crucial to the running and success of Àclèaf. I am passionate about finding the right suppliers and cementing these relationships,” he continues.

The first name with the correct answer drawn on the closing date of 28 February 2023 will be deemed the winner.
