Beer Bread - anyone know a recipe?

I am looking for a recipre for a soda type bread that incorporates beer, preferably guiness.
I have found some recipes on the Internet which basically suggest mixing self raising flour with the beer and sugar, but the thing is these all seem to incorporate quite a lot of sugar - 3 tablespoons!, - won't that taste sweet? I want to make it to serve with potted seafood, so don't fancy a sweet tasting bread.
Do you think it would work just leaving out the sugar

I have one too, not a sugary one, but it is a yeast bread instead of a soda bread. Ingredients as follows:
1 cup dark stout
1/2 cup water
2 tbsp sunflower oil
1 tsp salt
1 tbsp black treacle
2 cups white bread flour
1 1/2 cups wholemeal bread flour
1/2 teaspoon yeast (the active dry stuff)
add 3 tsp Dijon mustard during last kneading
Maybe that will work?"Remember that many of the things you have now you could once only dream of" - Epicurus0 -
Ok, the jamie oliver one is...
1oz fresh yeast or 3/4 oz dried yeast
1oz honey or sugar
1/2 pint tepid water
1/2 pint your favourite beer
1lb strong flour
1lb of semolina flour (or just plain if you can't get semolina)
1oz salt
Dissolve the yeast and honey/sugar in the beer.
After that you just make it as you would normal bread. Bake it for 20 -25 minutes at 225c or gas 7.I'm through accepting limits'Cuz someone says they're soSome things I cannot changeBut till I try, I'll never know!0 -
I'm not sure how much flour you're using, but if it's a pound-ish, then three tablespoons of sugar doesn't sound *that* much, really. Remember that in soda bread the sugar goes some way towards balancing out the 'salt' from the bicarb. I'd have a go, try it and then if it is too sweet, knock the sugar down, or try a less 'sweet' tasting sugar like a dark muscovado one, so that you get more of a treacly taste than a straight sugar flavour - that would be nice with Guiness. Soda bread is fairly quick to make and fairly cheap (apart from the beer lol) so it's not a huge expense to have a test run
It's good fun taste testing too
