    Made a jackfruit rice dish yesterday-  chopped an onion, sautéed until translucent, drained and chopped a tin of jackfruit, added to pan, threw in half a cup of basmati rice, added some smoked paprika, some 'chicken' stock powder, a squeeze of bbq sauce and water. Stirred then covered and cooked until rice was cooked and liquid absorbed. Very tasty and quick - had it with a blood orange, red grapefruit and pomegranate salad and leaves. 

    Today I am making Moroccan lemon and potato casserole to use up some of the potato mountain we currently have (dh and I both bought potatoes a week ago! 🤦‍♀️😂) we'll have the 'soup' tomorrow and the potatoes today with some spicy chickpeas : 

    3.5fl oz olive oil
    2 large onions chopped 
    1 head garlic chopped 
    1tsp ground cumin
    1tsp ground coriander 
    2 green chillis seeded and chopped 
    2lb potatoes peeled and sliced
    Zest & juice 3 lemons
    1.5pts veg stock
    Sea salt

    Heat the oil in a pan, throw in the onions, garlic and spices and saute for a few minutes. Add the potatoes, lemon zest and juice, stock and salt, bring to the boil then simmer for 15-20 mins. Drain off and reserve liquid to use as soup, serve.

  • The chickpeas and casserole were lovely and we had the soup for a couple of days too (with some of the potatoes in it) along with some olive bread. 

    I've got a freezer 'surprise' box out today - I think it may be the squash and tomato sauce/soup but I'm not certain 🤔 trouble is we've used a lot of stuff and moved bits around so there are no guarantees!! 

    If it is the 'soup' stuff, I'm going to make a curry - I'll cook some black speckled lentils to go in it and serve it with short grain brown rice, vegan yoghurt and various types of chutney - I cleaned out the fridge the other day and realised that I have a ridiculous amount of open jars in there so need to start reducing them!!

  • Decided to make burgers with what remained of the 'soup' and lentils- didn't put quite enough vital wheat gluten in (left the lentils whole too) so burgers were a bit sloppy!! 🤦‍♀️ however,  not to be defeated, I fried off the remaining rice with an onion, tamari and Chinese five spice and crumbled the burgers in with it to fry off - turned out lovely and we weren't disappointed!! I've cooked the rest of the lentils/soup/ wheat gluten as a 'log' so will blitz that tomorrow and make a bolognese with it - I'm back on clean eating from Monday so it will be the last of the 'fake meat' tomorrow  - I've enjoyed it immensely though!! 😉😁

  • Bolognese made - lovely! 😁 The rest of the seitan has been 'minced' and put in the freezer for another day. 

    Salad, sweet potato and hommous tonight for dinner probably- I'm going to do steamed veg with lemon oil and tarragon dressing tomorrow with bloomed wild rice and lots of salad leaves.

    😂😂😂 in all fairness, the descriptions are mainly used on here so that everyone gets a better idea of what I'm making - when dh asks what we're having to eat my response is usually 'stuff'!! 😂😂😂

    @KajiKita - bloomed wild rice is just washing the wild rice then putting it into a lidded jar in the dehydrator for around 12 hours. The process softens and 'cracks' the wild rice so that it can be eaten raw - just drain and rinse. It's chewy, 'nutty' and tasty as it is but the flavour is easy to change with a variety of dressings - I normally do enough of it to last a few days; I just take out what I want to use, leave the rest in the jar, top up with water and store in the fridge. Minimum effort food!! 😉

    I really like the idea of the rice. Especially as it’s no cook and once it’s done can be just grabbed on the go! I’m yet to use the dehydrator function on my ninja so this might be the first fun I have with it

    This sounds very interesting.  But can it be done without a dehydrator?  I'm wondering if you have the lid on the jar in which case the dehydrator might just be very gently heating?

    So bloomed wild rice is a kind of sprouting process, like I do with my mung beans?
