Hello all, wondering if anyone can help me out at all…

does anyone know if you can speed up the process of getting your mortgage offer, we have had a lot of back and forth and the seller has asked for the property to be put back on the market which has obviously caused us extreme stress and upset

Which bank is it? If you have a broker, what reason have they given for the delay?

It could just be that the bank is very busy, taking weeks to look at applications and follow on questions, in which case there's not much you can so other than answering their questions promptly and properly.

Coventry. - the back and forth was due to my partner being  self employed they were asking for a lot of documents which we provided back to them within the hour of being asked. It got to the point where they were asking for stuff we had already given them.

Sounds like a doom loop! Your broker should be able to escalate through the BDM. If you aren't using one then perhaps make a complaint to Coventry.

Coventry are normally pretty good. 
If you have a broker, ask them to shake some trees. 
If you are doing it yourself... go and shake some trees.
