As in the Jamaican side?
Not used many but Ainsley's turns out ok for us https://www.ainsley-harriott.com/recipe/peppys-brown-stew-chicken-with-rice-n-peas/ but normally use dried pulses we've cooked the day before rather than tinned2 -
Do you have a pressure cooker?Mortgage free by 33 - (21/07/22 - 32 years and a bit...)
Most DIY problems can be solved by a combination of spanner, pliers, screwdriver, Allan key and a blade. (Hold it, twist it, cut it!) Very occasionally industrial language, a hammer and an adhesive may need to be added to the mix. (Curse it, hit it, patch it!)0 -
We go with a basic version
1 cup rice2 cups water2 heaped spoons of coconut milk powderAdd tin of kidney beans (liquid and all)
Dash of chilli to taste
Then we give it 11 minutes in the sistema microwave rice cooker.
For a slightly more authentic hob version there's chopped garlic and floating a whole (don't chop!!!) Scotch bonnet chilli in while it cooks.3 -
I prefer this vegan version to Ainsley's chicken-y recipe.timehastoldme said:We go with a basic version

Hu? There is no chicken in the rice and peas... you can follow just the rice and peas part of the recipe and ignore the stew that he suggests to do with itRosa_Damascena said:

I didn't click on the link - just assumed the recipe would contain chicken stock.DullGreyGuy said:

No, it is veggie rather than vegan as it uses butter but doesn't use any stock at all. Naturally you could sub in a different fat, maybe coconut oil or more sunflower oil, and therefore make it vegan if that's your thing.Rosa_Damascena said:

PS. I know some fruits etc aren't vegan because of the forced labour of bees on the back of trucks etc so haven't included that in my definition of vegan
