Last year, when I made the mince pies I'm sure I used a recipe from some one very nice on these boards who gave icing sugar and butter amongst the pastry ingredients. I've hunted and searched everywhere here for ages, I can't find it at all.
They were absolutely gorgeous and even DS who's a chef complimented the pastry so I'm very keen to find it again. (I've promised to make some for OH's work colleague too this year after bragging about them ....
)
Does anyone know it or can point me in the right direction of where to find it please? (I've looked on Delia and Be-ro website but didn't see it there either).

The mince pie pastry recipe I got from on here that produces the most wonderful crumbly pastry was this:
1lb SR flour
8oz trex
4oz caster sugar
1 egg.
Rub trex into flour and sugar until fine bread crumbs, bind together with the beaten egg.
No need to rest.
Roll out thinly with plenty of flour as it can get sticky.

I use this one
for the pastry:
175g plain flour,
30g ground almonds
65g icing sugar
pinch of salt
125g cold unsalted butter, diced
1 large egg yolks, beaten with a tsp of iced water
all dry stuff in processor, pulse to mix, and egg mixture down funnel.
but I'm going to reduce the butter next time as it is too wet and ends up having loads more flour added as I roll. It makes incredible pastry and everyone loves the mince pies.There is nothing either good or bad but thinking makes it so.0 -

I just made mince pies using the above recipe I got from here. The pastry came out excellent. My 1st attempt as homemade pastry and I would definitely recommend it.0 -
Hi, you guy's probably know this tip already, but if you didn't, if you don't have any caster sugar or icing sugar in the store cupboard and need either of them, just put granulated sugar into a blender and blend it until you get the caster sugar consistancy or if you want icing sugar blend the sugar abit more until it looks like icing sugar. If you haven't got a blender, just put the granulated sugar into a plastic bag and roll it with a rolling pin until you get the desired sugar. The rolling pin version takes a bit of time but you will get there in the end. Saves a fortune and time flying out to the shop's to buy the sugar that you needed. Caster sugar is so expensive. i used this recipe too and i can vouch that the pastry is delish. i`ve only got 1 fairy cake tin and 1 muffin tin so half of my mince pies were hugeeeee. everybody that has visited my house this week have said how nice they are and im about to make batch no. 2 :Tproper prior planning prevents !!!!!! poor performance!Only when the last tree has died and the last river been poisoned and the last fish been caught will we realise we cannot eat moneyquote from an american indian.0 -
