@1hu The vast majority of mainstream lenders offer I/O remortgage products subject to meeting lender-specific I/O eligibility criteria which usually involves one/more of the following - minimum income threshold, acceptable repayment vehicle, LTV thresholds, etc.

It is possible, but you will likely need a good income, a good deposit and/or a repayment vehicle or possibly a combination of all of them. 

How many of the boxes you tick will determine your options. 
£20k income, 10% deposit and no repayment vehicle, you are probably not getting interest only. 
£80k income and a 25% deposit and you probably are going to have options.
